The Canadian astronaut demonstrated how honey behaves in space
“Strange things happen to honey when you remove gravity.” – wrote David Saint-Jacques.
Using honey to sweeten in space is a better idea than tens of thousands of grains of spilled sugar flying around the cabin. In addition, honey has no expiration date (it naturally crystallizes, preserves) and has septic (bactericidal) properties, which is important when stored at the station, said the astronaut.
Canadian astronaut David Saint-Jacques was on the International Space Station (ISS) from December 2018 to June 2019.
